During summer time I really enjoy food that contains a lot of herbs. To me the taste of herbs is the taste of summer in a dinner. There is something in herbs that brings out something that screams summer to me for some reason. And what is better with herbs than tomatoes ? Nothing right?! Add a nice crunchy, flaky, buttery crust and you have perfection for dinner.
This recipe can be made either with dijon mustard or vegan pesto. Both are equally delicious but up on your taste you might prefer one version more than the other. The crust recipe makes enough dough for 2 tomato pie so you can try both at once !
I personally enjoy the dijon mustard version coz of the slight kick the mustard gives but my husband swear by the pesto one.
