Is it only me or I always end up not knowing what to do with the pulp of my homemade nut milk ? I froze so much not wanting to put it in the compost bin and my freezer slowly became loaded of frozen nut pulp from cashew and almond milk. So I decided that it was the time to make all that frozen nut pulp worth something. I was out of cookies and in my house cookies are THE dessert staple. I wanted something decadent and chocolaty and decided to make some super moist dark chocolate nutty cookies. They are just like a brownie but in a cookie. Let me tell you this makes it perfect to pair with vegan ice cream! 
These cookies have a rich chocolate flavour and are moist with a little crunch since they contain chopped nuts. I guarantee you that if you are a fan of brownies you will absolutely love them. 
You can either pair them with a glass of cold vegan milk or with vegan vanilla ice cream if you are the brownie and ice cream kind of person.
